vegan pumpkin pancakes- yeasted
 
 
warm together:
1/2 C rice milk
1 tablespoon sugar
 
mix in:
2 teaspoons yeast
let mixture rest for 5 minutes.
 
mix separately:
1 C rice milk
1/4 C pumpkin puree
cinnamon, nutmeg, clove (or pumpkin pie spice)
 
add yeast mixture.
mix in:
2 C whole grain flour
pinch of salt
1 tablespoon oil
1 teaspoon egg replacer
 
cover batter & let rest for 30 minutes on counter.
spoon out batter & make some yummy pancakes!
