vegan cheddar and chive muffins
makes 9 muffins.
mix:
1 1/2 C all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
add:
4 tablespoons chopped & cold vegan butter like earth balance
knead and mush with fingers until blended with flour.
if your butter is melted, it won’t work.
add:
3 tablespoons fresh chives
1 C vegan cheese of choice
1/2 C vegan milk of choice (i have used coconut, almond and rice)
dash of pepper & tarragon
bake at 350 for around 20 minutes or until tops are just golden.
grease tin or use baking cups.
