vegan pumpkin chocolate chip muffins
mix:
3/4 C sugar of choice (i use vegan cane sugar)
1/4 C vegetable oil
3/4 C pumpkin puree + 1/4 C water
egg replacer for 2 eggs (enerG, 1/2 C applesauce, 1/2 C mashed banana, OR flax)
dash of vanilla extract
mix:
1 1/2 C all-purpose flour
3/4 teaspoon baking powder
1/2 heaping teaspoon baking soda
1/4 heaping teaspoon salt
pumpkin pie spice or nutmeg, clove, cinnamon, etc.
combine:
DRY into WET (do it)
add 1 C mini vegan chocolate chips. i don’t like the big ones…
bake:
fill greased or lined muffin tins
bake at 400 degrees until done.
eat.
